When we first met Will, the beauty and quality of his knives were self-evident. Good things come to those who wait, and we were more than happy to sit on Will's then two-year waiting list for this fantastic collection of knives. Our timing couldn't have been better. Will is no longer taking new orders while he works through a three year backlog.
Each limited-edition, numbered set includes a Butcher's Haste™, Chef's Knife, and Boning Knife housed in our Chef’s Knife Roll. These elegant, heirloom-quality tools are designed for serious work in the kitchen and field for years to come. Each knife comes with Heartwood Forge's lifetime free sharpening and maintenance (round trip shipping not included).
The Butcher’s Haste™ combines two essential components of proper butchering: precision and heft. Inspired by an antique French piece Chef Chris Hastings has carried for years, the Butcher’s Haste is a 14” long hatchet-meets-cleaver with a 5” curved blade and a 5” burled maple handle. We designed the Butcher’s Haste to chop thick pieces of meat and bone while doubling as skinning blade and mezzaluna. Will Manning forged the blade, shaft, and tang of each Butcher’s Haste from a single piece of steel reclaimed from a 50” circular saw blade salvaged from a lumber mill in Fairview, North Carolina. High nickel content prevents rusting common in similar carbon steel blades. Bronze pins complete the assembly. Made in Jonesborough, Tennessee by Heartwood Forge.
Our versatile Chef’s Knife is the foundation of the Sportsman’s Knife Collection. With a deep-bellied 8” blade, the Chef’s Knife pays homage to a traditional French design. Will Manning crafted each full-tang blade out of high-grade AEB-L stainless steel. A 4” burled maple handle and bronze pins complete the assembly. 13.75" total length. The Boning Knife is an 11.5” long boning and utility knife made from high-grade AEB-L stainless steel with a 4” long burled-oak handle. The Boning Knife’s flexible 6” blade was designed for delicate and intricate work, such as deboning small game or filleting a fish. Full-tang with bronze pins. Made in Jonesborough, Tennessee by Heartwood Forge.
